I want to view only headings down to a specified level, as in Word Outline View.
To do this I Collapse All, which leaves level 1 headings. To see the level 2 headings of a level 1 heading I right click on that heading and Collapse. To see all level 2 headings, I first search for level 1 headings, select them all, and then Collapse. Ditto for other levels.
There must be a simpler way to do this, isn't it?

There is no option in Atlantis to automatically hide or collapse specific headings or chapters in the document window.
But you can specify which headings to display in the Headings panel of the Control Board. Just right click the "Headings" panel, and use the "Show levels" menu:
