Especially when I edit an old document, but sometimes even on a new and not-yet saved document, the font and font size changes as I type. The only cure I've found that works consistently is to save the document as a .txt file and then resave it as an .rtf document after giving the document new font, font size, and then reinserting bold, italics, underline, etc. as needed.
Annoying.
I could save most of the trouble by creating a default font and font size but these change depending on the type of document (and where I am sending the document).
Is there a better way?

Lots of difficulties in your question because I do not know how you work when you start a new file.
Are you using a template with styles? Or are you just opening a new file and then choosing a font?
One clue here is that things work after you save as a .txt file. That is a method of nuking a file to rid it of all its styles and formatting.
I am wondering if it is a template problem. But it is puzzling that the file would work after you open the text file and save as .rtf, unless maybe the problematical template is not in play anymore.

I cannot remember anything precisely like what you are describing, but I have had some weird things happen, and they were often related to underlying codes that you cannot see. That is why saving as text helps; it gets rid of any such codes.

But as far as I remember, the only situation when Atlantis might automatically change the font (typeface) and font size is when you press Enter at the end of a paragraph, and the current paragraph style includes instructions to apply a new style to the newly created paragraph.
First a rule of thumb.
Before you start typing, have a look at the Atlantis toolbars. They will show you which style and which font and font size are current. If you start typing at the current location, you should get the same style and font properties, unless you take specific actions to change them.
Now, what exactly are you typing?
You might (inadvertently) type a hot key associated with a format from the Format Palette, or a specific style.
You might (inadvertently) type “Ctrl+Space” which will reset the font format to the default values of the current style.
You might (inadvertently) switch the Format Brush on when it is loaded with a specific font format.
You might (inadvertently) start typing after pasting some text with “Ctrl+V”. The pasted text might have different style and/or font format, in which case any new typing will get formatted in the same different way.
Note that there is no generic default font and font size for a whole document unless you use only one style, generally the Normal style. As soon as you change the current style, the font and font size might change accordingly. “Default” font and font size are style, not document, properties.
