There is a very simple workaround: before saving a document to EPUB, place a copy of the original DOCX or RTF document in a safe place on your system. When you have an EPUB file and you want to edit it, simply go back to the original DOCX or RTF document. And resave it to EPUB when you have finished editing it.
You can use any of the many online converters like Online EPUB Converter, for example.

The free Calibre (https://calibre-ebook.com) is also good at conversions. You can convert from epub to something like .docx, but I have not tried that particular conversion. Calibre is also an ebook manager. It is one of the "must-have" programs, in my view, if you work with ebooks.

More on converting
I tested a couple of epub files. I wanted to convert them to .docx files.
I used the online converter and also the free Calibre program.
Results were about the same. The main problem was loss of spacing between paragraphs.
However, the converters produced very clean styles with the names:
