As I have realised, there are two different kinds of heading-styles, regardless which level:
The first one is easy to create and handle - in the Edit Style|Paragraph|Outline Level Dropdown Menu the level can be changed anytime...
In the second one, the Outline Level Dropdown Menu is grayed out and cannot be changed...

So what I want to know: How can I create a header of the second type?

In the “New Style” dialog, enter either Heading 1, or Heading 2, or Heading 3, or Heading 4, or Heading 5, or Heading 6, or Heading 7, or Heading 8, or Heading 9 as the new style Name.
Give the new Heading N style any desired properties.
OK out of the “New Style” dialog.

Again - I know that all!

But in this way the Outline Level Dropdown Menu is not grayed out, and exactly this is what I need!!!
The reason is that only with this type the headings are transfered to the exported epub. Otherwise I have in Sigil each chapter to open|mark each chapter heading as heading and save again. That is a lot of work...
Also this way the batch-conversion-tool is much regressed...
So - PLEASE - show me a way how I can change a heading from one type to the other!!!

As Admin said, the outline level of the "Heading N" styles cannot be changed. In other words, you cannot change the outline levels of the built-in Heading styles. This is true in Atlantis and MS Word. This is why the outline level property is unavailable (grayed out) for any of the built-in Heading styles in Atlantis. When a style is named Heading 1, its outline level is automatically set to level 1, when a style is named Heading 2, its outline level is automatically set to level 2, when a style is named Heading 3, its outline level is automatically set to level 3, etc.. You cannot change the preset outline level of the Heading 1/2/3/4/5/6/7/8/9 styles. In MS Word, you don’t even get an outline level drop-down to change the level of the built-in Heading styles. Whenever a style is named Heading 1/2/3/4/5/6/7/8/9, its outline level cannot be changed.
If you associate the chapters of your eBooks with the built-in Heading 1/2/3/4/5/6/7/8/9 styles, Atlantis will automatically export your chapter headings with the built-in outline level of the Heading 1/2/3/4/5/6/7/8/9 styles.
The question is why do you want to change the outline level of the styles associated with your chapter headings? If you associate the main chapter headings with the built-in Heading 1 style, these headings will be exported to EPUB as headings with outline level 1. If you associate the sub-headings of your chapters with the built-in Heading 2 style, these sub-headings will be exported to EPUB as headings with outline level 2. What’s the problem?

Whenever a style is named Heading 1/2/3/4/5/6/7/8/9, its outline level cannot be changed.

Exactly this I didn't know and asked for.

2. What’s the problem?

Now no more problem at all.

The problem was, that English isn't my native language but German; so I named my headings 'Überschrift 1,2,3...' instead of 'Heading 1,2,3...'

I never imagined that the name makes the whole difference - I thought 'there must be a checkbox, radiobutton or so anywhere...

In the English version of Atlantis, you should try to use the native English names for the built-in styles.
Note that built-in styles have two special properties: they cannot be renamed, and their outline level cannot be changed. But you can change any of their other properties.
