So, for now, the simplest and cleanest solution to my PDF woes is Win10's default "Microsoft print to PDF" which, at the moment, prints all my weirdo fonts perfectly fine.
For viewing/reading, the portable version of SUMATRA is tiny and fast.

UPDATE Problem half solved
One font, one to go!
Installing in Windows the fonts TT1044M_.ttf and TT1139M_.ttf fixed the Calligraph421 BT problem. In real time, no less!
(It was wild to see Atlantis reformat all text using this particular font on the fly! Go job Atlantis team!)

So I've been using Atlantis for a while, on Vista x64 then Win7 x64, across multiple machines. Installing the program and ensuring fonts are installed in Windows always resulted in my document showing up exactly as typed across all installs and machines.
